Madrid Fusion Showcases Best Of International Haute Cuisine

Madrid Fusion – one of the highlights of the international gastro year, starts today, Monday 23rd January, at IFEMA.

One of Spain’s flagship foodie fairs showcases some of the top trends in the industry and “delves into what is going on now by offering a veritable range of diverse concepts that exist hand in hand in a kind of multicultural melting pot”.

Offering a preview of the trends and currents that are shaping the future of haute cuisine, the 21st annual Madrid Fusión Alimentos de España is back at full throttle after two difficult pandemic years.

Emotion, risk, creativity, passion, innovation, artistic freedom and craziness are the buzz words behind this year’s slogan – Sin Límites-No Limits.

Indeed contemporary cuisine has never manifested itself in so many different ways before. There are no limits to imagination or to using new or already familiar techniques. Creativity is expressed in the simplest and the most complex forms.

 

It promises to be an amazing experience for visitors, offering lots of activities and new workshop and masterclasses..

In 2023, Madrid Fusión will emphasise experiential and sensory aspects and will delve into today’s gastronomic world.

It will feature international with chefs from the four continents in a programme that will bring remote restaurants to the fore, located in places like Poul Andrias Ziska (Koks**, Faroe Islands), and Virgilio Martínez, Pía León & Malena Martínez (Proyecto Mil, Peru), as well as new urban cuisine, such as that of James Knappett (Kitchen Table**, United Kingdom).

And of course Madrid´s Dabid Muñoz will be there along with other Spanish super chefs such the brothers Joan, Josep and Jordi Roca, Quique Dacosta, Ángel León, Ricard Camarena, Andoni Aduriz, Oriol Castro, Eduard Xatruch & Mateu Casañas amongst a strong Spanish contigent.
